Brett Sour Stout

We took 10 gallons from our first ever production batch of our Jefficus Stout, left out the bourbon, coffee, and vanilla, then soured it with Brettanomyces over the 12 month course of our first production year. While the Brett slightly thins out the body, it doesn’t prevent the roasted and chocolate malt profile from shining through and does provide a very dry finish that contrasts the usually sweet profile found in our regular Jefficus Stout.
